Jake Godby is a genius. He took what must be the simplest food in the world - ice cream - and, by using the principles of molecular gastronomy, created what he calls "a challenging ice cream shop." The day's flavors are likely to include chocolate-smoked sea salt, duck fat pecan pie, "Red Hot" banana, hibiscus beet and a bourbon and corn flakes combo that goes by the name of Secret Breakfast. Or maybe he will be serving foie gras ice cream sandwiches that day. While it’s not everyone’s cup of tea, one reviewer put things into perspective when he said, "Not every creation is brilliant. But what is brilliant is shockingly brilliant."
