Ask any of the top pizza makers around the country whose pies they admire the most, and odds are they will put Pizzeria Bianco near the top of their list. The back story is simple: Bronx native Chris Bianco and his girlfriend, Susan Pool, opened this restaurant in 1994, based on the principle of using only the highest-quality ingredients: Sicilian oregano, San Marzano tomatoes, organic flour, purified water and mozzarella. The results are "flawlessly executed" versions of "some of the best Neapolitan-style pizza anywhere," topped with "incredible organic ingredients," many of which are made in-house. Unfortunately, an excess of quality can lead to excessive popularity, especially when a place seats only 42. Fortunately, they just extended their hours (they now serve continuously from 11 a.m. to 10 p.m.), which should ease the waiting times considerably.
